Brandy ist der Oberbegriff für Weinbrandgetränke
Dieser Alkohol kann je nach Herstellung und Herkunft auch eine ganz eigene Bezeichnung haben. Am einfachsten ließe sich das Wort Brandy wohl mit Brand aus Wein, also Weinbrand, übersetzen. Nicht mit Obstbränden zu verwechseln sind Fruchtbrandys, diese müssen das verwendete Obst im Namen tragen, gehören allerdings zu den Likören.
Natürlich hat die Europäische Union auch für die Brandys Richtlinien erlassen. 5o Prozent des Alkohols müssen somit aus Branntwein stammen und aus einem Weindestillat. Dieses darf jedoch nur zu maximal 94,8 Prozent vol. destilliert worden sein. Wenn das Fassungsvermögen der Fässer, in denen das Fabrikat gelagert wurde, unter 1ooo Litern liegt, muss es mindestens sechs Monate gelagert worden sein. Wenn die Fässer mehr als 1ooo Liter Fassungsvermögen haben, müssen es zwölf Monate gewesen sein. Der Alkoholgehalt des Weinbrandes muss bei mindestens 36 Volumenprozent liegen, in Deutschland sogar bei 38 Volumenprozent.
Der Cognac ist ein französischer Weinbrand und kommt aus dem Gebiet Charente. Kommen die Weinbrände dagegen aus der Gascogne werden sie als Armagnac bezeichnet. Bei beiden Bezeichnungen handelt es sich um geschützte Herkunftsbezeichnungen.
Spanien ist der größte Brandy-Hersteller der Welt und hat die längste Tradition. 90 Prozent des spanischen Brandys werden an der Atlantikküste hergestellt. Seit 1987 ist dieser Branntwein unter dem Namen Brandy de Jerez geschützt. Seine Herstellung wird von einem Kontrollorgan streng überwacht. Es ist der einzige Brandy weltweit mit einer von der EU zugelassenen Herkunftsbezeichnung. Auch spanischer Brandy muss zu 1oo Prozent aus Wein gebrannt sein. Bei spanischem Brandy kommt ein besonderes Destillationsverfahren zum Einsatz. So werden zwei unterschiedliche Destillate verwendet. Träger des Brandy-Aromas sind die Holandas, die zu 6o bis 65 Prozent aus Alkohol bestehen. Für einen feineren und leichteren Geschmack sorgen die Destilados. Sie bestehen zu 84 bis 86 Prozent aus Alkohol. Interessant ist die Lagerung dieses Fabrikats. Die erfolgt nämlich in Fässern aus amerikanischer weißer Steineiche. Darin wurde in der Regel zuvor bereits Sherry gelagert.
Spanischer Brandy ist in drei Qualitätsstufen bekannt. Der Solera muss mindestens 6 Monate fassgelagert sein. Die Regel sind 18 Monate. Seine Farbe ist noch hell. Er ist zudem leicht und besitzt einen frischen Weingeschmack. Der Solera Reserva muss zwölf Monate im Fass gereift sein. Er reift bis zu fünf Jahre, ist im Schnitt jedoch drei Jahre alt. Sein Geschmack ist aromatischer, die Farbe dunkler als der Solera. Zu guter letzt ist da der Solera Gran Reserva. Er muss 36 Monate gelagert worden sein. Tatsächlich lagert er häufig um ein Vielfaches länger. Seine Aromanuancen reichen von Kaffee über Schokolade, Karamell mit Vanillenoten bis hin zu Rosinen und Pflaumen.
